AIP Avocado Chocolate Mousse

Preparation time: 5 minutes

Portions: 4



2 larger avocados

1/2 cup coconut milk

1/2 cup carob

1 tablespoon coconut oil

1 teaspoon honey or 1/2 banana



Put all the ingredients in a bowl and blend with an immersion blender until smooth. Divide into 4 smaller bowls or glasses and let set in the fridge for 30 minutes. The portions may seem small but the mousse is quite rich and you don’t need much of it. If you like it so much that it’s not enough for you though, you can make a double batch next time 😉

You can serve by itself or with some fruit, such as berries, peaches, or apricots.
