Coconut and Raspberry “Porridge”

Serves 2

*AIP, paleo, vegan, gluten-free, dairy-free, sugar-free, low-carb, nut-free


1,5 cups raw organic desiccated coconut

2 tbsp. coconut flour

1 tbsp. coconut oil

¾ cup liquid from coconut cream (or you can just use water)

Pinch of cinnamon

1 cup frozen raspberries

1 tbsp. collagen powder (optional)



Mix all the ingredients except raspberries and collagen in a pan and bring to boil, stir occasionally.
If you find the mixture too thick, you can add a bit of water. Add raspberries, turn the heat down and stir for a few minutes until the raspberries are soft. Turn the stove off, add collagen powder and serve 🙂
