Sweet potato and apple breakfast “porridge”

It is not always easy to come up with meal ideas on the AIP diet, especially if you have numerous others food intolerances like me. The most challenging form me is always breakfast. For me, the easiest option is usually to make a smoothie with ingredients I am allowed to eat. But sometimes I don’t really feel like a liquid breakfast. So I started looking for inspiration. Most AIP/paleo recipes contain meat however. If you don’t want to eat meat three times a day, there are not too many options. So I started coming up with my own recipes, as I do most of the time anyways, and come up with this yummy recipe 😉

 

Ingredients:

2 small or 1 large sweet potato

1 can organic coconut cream

1 tbsp. coconut oil

Pinch or two of cinnamon

1 large apple or 2 smaller ones

 

Instructions:

Peal and coarsely grate the sweet potatoes. Put them in a pan, add coconut cream, coconut oil and cinnamon. Cook and cover for about 10 minutes until soft, stir occasionally. Add apples cut into cubes approximately 2 minutes before the end. Serve warm and enjoy!
